Hilton Clark Sun Valley Resort’s OLIVE resto blends great flavor, wide selection and presentation in perfect harmony
What would have been a gloomy, ordinary Friday was brightened up by Hilton Clark Sun Valley Resort’s all day dining restaurant, Olive, with its ‘Harmony of Flavors’ weekend buffet.
Francis David, Hilton Clark Sun Valley Resort’s Commercial Director, who just celebrated his birthday, was his usual bubbly and colorful self as he played host to us, media guests.
Teeming with verve and flowing with excitement, Francis toured us to the different buffet stations, which were all visually mouth-watering. To see is one thing, but as we kept saying all throughout the tour and eventually the meal, “The proof of the pudding is in the eating.” And once we started eating, we didn’t want to stop!
Because of the wide selection, I have mentally prepared myself to eat the ALBOE way – as PPC EVP Noel Tulabut put it – A Little Bit of Everything. I wanted to sample all the offerings in the buffet, but even just a bite of what I got already filled me to the brim. So, I sampled ALMOST everything.

The grand buffet highlights a premium selection of both local and international dishes, as well as different interactive kitchen stations: Seafood Boil, Sashimi, Singaporean Laksa, Fresh-from-the-grill, Cold cuts and cheese, plus the not-to-be-missed Dessert Corner featuring a mix of gourmand confections and colorful, Filipino cakes and delicacies, among other treats. Olive’s evening buffet is made even more special with a live carving station.
Specially curated by Executive Chef Robert Davis, the gourmet selection highlights sustainably-sourced, fresh ingredients from the North.

‘Harmony of Flavors’ at Olive is open for buffet lunch on Fridays to Saturdays at Php 1,450 per person and on Sundays at Php 1,700; while buffet dinner is from Fridays to Sundays at Php 1,700.
