Chef Jam Melchor returns as Food Talks 2025 Keynote Speaker

Chef Jam Melchor, one of the country’s most passionate advocates for Filipino cuisine and sustainable food systems, returns to Food Talks 2025 as this year’s keynote speaker.

Widely recognized for championing Filipino culinary heritage, Chef Jam has represented the Philippines on the global stage, with distinguished appearances in Italy, the United Kingdom, and Southeast Asia. His work has made a mark at prestigious international events such as Terra Madre Salone del Gusto in Italy, the ASEAN Heritage Spice Gastronomy Conference in Indonesia, and Le Tavole Accademiche—where he became the first Filipino chef to present traditional Filipino cuisine.

As the founder of the Philippine Culinary Heritage Movement and the Slow Food Youth Network Philippines, Chef Jam continues to push for food that is meaningful, mindful, and rooted in local tradition. His advocacy emphasizes the importance of sustainability and cultural preservation through gastronomy.

In addition to his global engagements, Chef Jam is the founder of YesPlate, a healthy food delivery service, and teaches culinary arts at St. Scholastica’s College Manila.
